Our first time in Waco visiting from California and loved the food and dining experience. Our server Kimberly was outstanding and offered excellent menu suggestions and was very personable. We will definitely come back the next time we’re in Texas! Thanks again Kimberly!

It's an adorable place! The food was not good though. Turkey sandwich was dry, burger was over sauced, kids pasta was nearly inedible- complete mush and just yucky. But the wings were good. The food all came out at different times too. My kids had to wait a significantly longer time then me to get their food. Lots of potential though.

The best meal - Crispy Salmon with butter beans with broccoli, wings and cumber and macaroni cheese, biscuits, coffee fried apples pie and vanilla ice cream

I am sure we are like every other people who love Chip and Joanna, that wants to see the beautiful creations they have made. Well, it is beautiful 😍 A+++ for the hotel. The food and service was unfortunately another story. It was a Sunday afternoon around 2:30 pm. Maybe 20 customers total in the restaurant. Plenty of staff, but yet there were 6 tables that needed to be cleared. Five of those tables were full of dirty dishes from our arrival until we left around an hour later. Everything with service seemed to happen in slow motion. We got our sodas, then our waitress took our order. It took about 20 minutes to get 2 burgers and fries. Someone from the kitchen brought it to the table, and I waited for the waitress to come back so I could get some mayonnaise, but she didn't show. I finally caught the guy from the kitchen (who was delivering to another table) and asked him for the mayonnaise. Our waitress finally showed up about 5 minutes later. We ran out of drinks, our burgers were overdone. We asked for medium rare and they were both fully done, with little to no seasoning. So for an amazingly beautiful facility, with a high class look, the restaurant didn't live up to what they created.

Arrived at a busy time on Sunday, 1245 ish. Was never give a drink menu. Asked what we wanted to drink and I told Her a mimosa. Got our waters and had what appeared to be coffee grounds in the bottom. Got our mimosas and it took about 20 min for her to take our food order. I mentioned The coffee grounds in the water and asked for a new water. Received the new water with still floating particles. Food was okay. Never received silverware. Asked for silverware and it was handed to us bare, not rolled in a napkin. When we asked for napkins we were handed bar napkins. Bacon extremely overdone. Asked for our check at the end and mentioned the floaters in the second water. Bartender/waitress looked at me disgusted, no apology. Disappointing for a chip & jojo establishment.

We dined at The Brasserie during our visit to Waco. I made reservations on a Monday night at 7pm; however, upon arrival there was ample seating and the hostess seated us near the window. We went to Bertie's on the Roof to take in the views, take a few photos and order a drink prior to our dinner reservation. We noticed more guests dining at Bertie's; however, after arriving at The Brasserie, I was glad we opted to dine there, I felt this was a more intimate dining experience. We ordered the Braised Pork for Two. This also came with roasted potatoes, greens and two popovers. This was served family style and was plenty for both of us. The pork was fork tender, the potatoes had the right amount of garlic and seasoning and the greens were very good as well. The restaurant decor was lovely and tied in with the look and feel of the hotel. Our server was friendly and the service was attentive.

AMAZING food! Loved absolutely everything. Do not skip dessert or you’ll be missing out big time on the perfect ending to a great meal. Restaurant is beautiful and classy, top service. loved everything about it. Being huge Fixer Upper fans who have seen every episode there is…. It was so much to be at the very place Chip & Joanna designed and brought to life.

We went there for a light lunch. I had an avocado caprese sandwich, chicken salad croissant, Korean-style wings, and buttermilk. The avocado sandwich has no avocado. It is more like mayo, and a little avacado was added. I like the wings and the chicken salad. Chicken salad had a lot of mayo.

We had creative drinks at the brasserie, enjoying the atmosphere in those bright, spacious dining rooms. We then took our drinks to the cozy, antique library at the bottom of the staircase.
The design, furniture, and decorations of this hotel were lovely. The staff were always friendly and welcoming, and the drinks well balanced.
We look forward to going back and exploring the coffee counter and rooftop bar.

We stopped by on our way back from Austin.

We’re big fans of Magnolia, so we HAD to check out the new Hotel.

Gorgeous decor of course! We sat at the bar at the Brasserie, which is pretty much the lobby bar.

Had a glass of wine and one of the tequila cocktails, both were great.

    Service was lovely.

Just had dinner here for the first time and it was excellent! I had the kale Ceasar and the grilled salmon. The salmon was excellent, crispy on top, with fresh green beans and almonds on top. Two in our party had the grilled pork chops, served over sweet potatoes with peaches and corn. We also tried the Dr pepper Fudge cake, which tasted like a fresh brownie, and peach cobbler. Both were served warm.

The meal was very satisfying, served in a quiet yet comfortable, casual atmosphere. Our served was friendly and upbeat.

Overall a good experience and I would go back again. I'd probably order the salmon again, it was so good I don't know if I'd venture out. But they did have a chicken on the menu that sounded good, too!

If you visit, they have a special coffee shop just down the hall that is also excellent!

This review is for The Brasserie! I had dinner here tonight, I had to say, the food was just ok. The only thing I like was the salmon dish. The rest was just OK. I forgot how big the portion is in TX! So if you are like me, coming from Cali, be ready to share! 1 plate portion can be for 2. Oh, the shrimp grits are not good at all! Blend! Twice trying it. Thanks, goodness, that they are willing to take it off from the check.

Saturday lunch with reservation. Service was great. Our waiter was very attentive and friendly. The food wasn't great though. I had the 1928 Burger. It was OK, but for a $25 burger I was expecting more. The bottom bun was soggy and squishy. My wife had a Turkey club and she said it was OK. So, our experience was good but nothing to write home about and although the food was OK, I don't think I'll be back again.
