    Fabulous fine dining atmosphere! Excellent food and great service. Ky was the best server I've seen in a long while. He was genuinely friendly, knowledgeable about the menu and deserts, and was very attentive without being intrusive.
    Will definitely be back and next time will leave room for the Cherries Jubilee!

    Included with the classy and tasteful atmosphere, you are assured to have the best dining experience in Waco, My husband and I have frequented Diamondbacks at least ten occasions, and they do not ever disappoint as they always hit their targets from fantastic human, sincere connection to superb cocktails and dining, Chuck out their Happy Hours daily as they make your dollar stretch. I recommend the glazed beef tips, brussel sprouts, and the cheesecake can smash the factory all day,When you leave, you’ll know you made an excellent choice.

    Food was good, service and atmosphere were great. Meatball appetizer tasted more like meatloaf. Nigiri sampler, steak, mashed potatoes and broccolini were all good. This was the only wedge salad I've had that didn't come with bacon. Cheesecake was ok. Espresso was really good.

    On our 29th anniversary we experienced the following:
    Gnats flying
    Fried calamari overcooked
    Sushi was amatuer
    Only 1 menu for the table
    Miso Glazed Salmon was terribly overcooked and bland
    Crab fried rice was gross
    Truffle fries were grease soaked
    Drinks were drastically inconsistent
    Club soda had no bubbles
    Ice was rationed.
    This place is a joke. The only things elevated at Diamondbacks is their prices, my lack of patience, and my promise of never going back.
    After removing our entrees(we didnt eat) from the tab, 5 drinks and 2 appetizers cost $167. We tipped 20% on top of that. What a robbery!
    A high volume night is no excuse for compromising quality when your charging for a premier experience. When we left at 745 half the tables in our area were empty....fact
    DON'T WASTE YOUR MONEY!🤢🤮

    None of this is fabricated. Every line is true and not over exaggerated. The Sizzler would have been more favorable.

    Came to Waco for an event. Went to a nice dinner for my bday. Service would get 10 starts because Kylan was amazing! Felt right at home! Food was excellent, sushi, steak, lobster bisque, dessert, flavorful and cooked to perfection. But the service from Ky was top notch! If you’re ever in Waco and looking for a romantic and wonderful experience, come to Diamondback’s and ask for Ky! You won’t be disappointed!

    Made a reservation for Saturday for a special occasion. Arrived and there was confusion about our table, waited 5-10 minutes till they got us seated, then waited 10 mins for water and greeting. Manager apologized, but service never improved rest of the evening. If this has been Texas Roadhouse it would have been acceptable, but at their prices this was such a disappointment. Lobster s'cargot was good. NY strip with peppecorn sauce was really good, 16oz Ribeye was basically a waffle house steak and pretty blah. Truffle Parm fries were good, creamed spinach was average. Overall I would not recommend and will not go back. It is just WAY too expesive for what you get.

    Party of eight with reservations. The wait staff was not sufficient to provide timely service. We were there for over three hours total. Gnats were flying around the entire time sometimes landing on food. Wedge salads were good. Filet cooked medium was not hot enough to melt the truffle butter. Scallop potatoes with cheese was like potato cheese soup. Baked potatoes were lukewarm, not hot. Seared tuna was good. Horseradish sauce was requested when ordering but never brought out even after the waiter was reminded. Crème brûlée tasted peculiar with a butterscotch flavor. Cheesecake was good. Throughout the entire meal we sat with dirty plates until the next course was served. The waiter apologized for the slow service and thanked us for being patient. I read some reviews and the owners response which often was excuse laden about how busy it was, some catastrophe in the kitchen or asking the customer to have grace. What they should be doing is asking the customer to call a phone number so they can make it right. When spending $200+ for a sit down in a nice restaurant you shouldn’t be asked by the owner to provide grace when they fail. I will not be coming back, we are in Texas and there are steakhouses a plenty.

    Celebrated our 45th wedding anniversary there, best experience, food and cocktails!! The hostess was wonderful and Nico was an excellent server, and so nice of the management staff to stop by our table to chat with us during our evening there!
    Can't wait to return on our next visit to Waco!

    My family was there THREE HOURS total. We also waited an hour and 20 minutes until we received all of our main dishes. They screwed up half of my family’s plates and it was evident with the quality presented that it was overpriced. The 77$ ribeye steak that I ordered looked cut in half and was overcooked so I sent it back so they could try again. I was glad that they cooked it to perfection the second time but was still disappointed for the amount of time that I had to wait in total.

    The service was impeccable. Danny our waiter was the absolute best. The food was really good and what I would expect from a higher end Steakhouse. The dessert was really delicious. Would come again.

    Had an amazing experience at Diamondbacks’s last weekend. I visited with my mother on Saturday evening. Despite being very busy, I was so impressed with how well prepared the restaurant was.
    Every staff member was so friendly which created a nice atmosphere. Our server was excellent and the food was better. Would definitely recommend their pomegranate limeade cocktail.
    We ordered the shrimp cocktail as an appetiser which was amazing. Our steaks were perfectly cooked. I had the rosewood filet while my mother had the cowboy ribeye which comes with a delicious chile butter. Would recommend!!
    Couldn’t fault my experience and will definitely be back

    As parents of a Baylor University student, we’re always looking for spots that feel like a real treat when we visit Waco.

    Diamondback’s has become that place for us—hands down our son’s favorite restaurant in town and the perfect break from dorm food. We try to make it down every three months or so, and it never disappoints.

    What sets this place apart is the owner, Meghan. She personally oversees every aspect of the operation, from the kitchen to reservation scheduling, and it shows. We had an issue once in getting our table at the exact time we requested with the hostess. Meghan immediately contacted us and apologized and assured us that she would that would be rectified. She certainly kept her promise and each time since, she personally reaches out to us to confirm table reservations. That level of hands-on care from the owner is rare and really makes you feel valued.

    The food is everything you’d expect (and hope for) from a top-tier Texas steakhouse. The filet mignon is phenomenal—perfectly cooked medium-rare every time, melt-in-your-mouth tender, and when you add the sautéed mushrooms and that luxurious truffle sauce… it’s next-level delicious.

    The sauce brings this beautiful earthy depth that complements the beef without overwhelming it. You absolutely have to try the lobster tail too—just tell your server to prepare it the way the Baylor Basketball team likes it. It’s a fun little insider request and the result is outstanding!

    The wine list is impressive and thoughtfully curated, the sides are excellent, and the whole experience feels polished yet warm and approachable.

    We usually dine a little later in the evening, and on our last four visits we’ve been lucky enough to have Ky as our server. He is genuinely one of the best waiters we’ve ever had anywhere—super professional, incredibly attentive (drinks never run low, he times his table visits perfectly, reads the table like a pro), and never pushy with upsells, but always happy to share great recommendations. After a few visits he started remembering our names and greeting us like old friends. It’s that kind of personal service that keeps us coming back.

    Everything about Diamondback’s—food, service, atmosphere, and ownership—delivers a consistently amazing fine-dining experience. If you’re looking for a special night out in Waco (date night, family celebration, or just treating yourself), this local gem is the one. We highly recommend it and can’t wait for our next visit!

    absolutely had a fabulous experience! Ky was our server and he was so attentive, communicative, and kind! loved his presentations and explanations of everything as it was our first time dining here. absolutely will come back and recommend the red oscar as well as the mix. you must save room for dessert!

    We had a wonderful, relaxed meal. Drinks were perfect, filets were perfection - cooked exactly as ordered & very tender, lobster tails was good - not the best ever, but I’m glad I ordered it, salads were delicious, and the Tower of Chocolate was unbelievable! Our server, Courtney, couldn’t have done a better job!

    Came here for dinner and had an amazing experience. Came late and was still able to get a perfectly medium rare prime rib. Lobster bisque had chunks of lobster and excellent quality. The lobster escargot was amazing, and the thick cut bacon was great. Our server was knowledgeable and friendly. Really was the best meal I can remember having in a long time.

    My wife and I went there for our 20 year anniversary and they had a rose on and a hand written note on an Anniversary card on our table. Sara our waitress was the best. The food was superb and cooked with perfection. My first Tomahawk steak and it won't be my last. Thank you for making our anniversary special without our knowing. Thank you again Sara

    We went here for my wife’s special birthday. When I made the reservation I said it was for my wife’s birthday. Upon our arrival the receptionist wished my wife a happy birthday. There was a card at our booth wishing her a happy birthday and our server, Rex, pointed out that she would be getting a complimentary dessert. Rex provided outstanding service which was a perfect complement to the excellent meal we had—Diamondback sushi roll followed by the sesame encrusted seared Ahi tuna closing out with turtle cheesecake. We will certainly go back here the next time we are in town.

    Husband and I went crazy and decided to get married in the middle of nowhere, the "closest" place with restaurants was Waco and found this place in an article.
    So happy with our choice! They were great!

    We asked a little of everything, the only thing we did not like was the tuna.

    The desserts are huge!!! We really wanted to try several, but we could not order since there was no way we would finish them.

    Always a wonderful experience at Diamondbacks! We went to celebrate my birthday, and everything from the moment we walked in the door until we walked out was fantastic! The food tasted amazing, Kelsey our server was attentive and so sweet. She even brought out a sparkler in a cup of whipped cream at the end to celebrate. Marshall our host was equally helpful and so nice. We’ll always go back to Diamondbacks!

    Lighting made the place feel like a perfect date spot to celebrate the night with my wife. We made no prior plans, but despite that they heard of our anniversary, and gave us an amazing evening. I wish I took pictures of the food, but it was just too good to wait. Kaleb was a fantastic server with attention to all of our specifics. The Cowboy Ribeye is every bit worth the price tag on it.

    The best place to have a date night in Waco. From arrival, the staff were friendly and attentive. The host was welcoming and set us up with the perfect seat per our needs.
    Our server, Jasmine, was fantastic. She never missed a beat explaining the menu and building history.
    The beverage selection is viewable on a tablet device provided when you sit. They offer wine flights, glasses, and bottles. They also have some amazing craft cocktails.we opted for a bottle of red blend.
    We started with Lobster appetizer. It was good, buttery garlic cheesy good. but I will try something different next time.
    Our next course was house salad and lobster bisque. Both were a must try! Delicious. And for a bread, they have the most amazing popovers. These were a 5-star attraction on their own butter flaky crossaint like cheese and rosemary.
    We ordered the chef selection petit filet and trio of filet. Both Steaks were cooked to perfection, the miso glazed salmon was perfectly cooked, and most. We ordered the bacon Brussel sprouts as a side, and the portion was huge.
    For dessert, we had the butterscotch creme Brule with coffee. It was light and hit the sweet tooth just right. And the coffee they are using is perfectly brewed.
    The manager Michael came to visit us and was a great host. Made us feel very welcome in his establishment.

    Amazing steak! Possibly the best we've had. Super cozy and romantic atmosphere, service was just great and loved the rosemary popovers! We were visiting for the eclipse and would definitely come again

    The dry aged steak was super good! One of the better steaks I’ve had in a while. But the bacon slab appetizer was not great. Came out cold and just didn’t taste that good. The service was excellent! We loved our server. Atmosphere was dated. Needs a bit of a makeover. The bud lights and various cheap beers on display above the bar seem like an odd choice.

    Had a really great time with my husband. The atmosphere is so romantic and the food divine *chef’s kiss*. Our server J was so nice and courteous through and through, great recommendations too! We started with the calamari appetizer then the caesar salad and for the main course I got the lobster and he got the lamb chop. The roll was a bit salty to my liking but it didn’t lessen the experience. We’d definitely come back and we recommend!

    Fantastic Meal! We had the "splurge meal" of our trip here and it was divine. The Rosemary Cheddar Popovers were still hot and so delicious, my fiancé had the lobster bisque and really enjoyed it. I had the Lobster Escargot and haven't stopped thinking it since. I went online at the table and ordered an escargot pan on Amazon to make this at home. HIGHLY suggest this appetizer. I opted for the wedge salad with my steak (odd to me that they upcharge for bacon on a a wedge) and it was fine, my fiancé really enjoyed his house salad and said it was crisp and refreshing and the dressing was perfect. He opted for the 10pz filet, it was soft and flavorful, I had the Ribeye and the char was perfection. I wish we weren't traveling and I could have brought the rest with me. We split the mashed potato's and they were perfect. Our server, Chastity, was awesome. Very nice, knowledgeable and attentive. 5/5 all around.
